Bia Kid Shepherds Pie
Recipe for four portions
Mashed Potato
500 grammes peeled potatoes
40ml milk
10 grammes unsalted butter
Meat Sauce
450 grammes lamb mince
100 grammes / 1 onion, finely chopped
10ml / 1 tbsp olive oil
120 grammes / 1 peeled carrot, diced
15 grammes / 1 ½ tbsp corn flour
½ tbsp fresh parsley
1 tbsp tomato puree
250ml chicken bouillon (either home made or 20 grammes concentrated bouillon or 1 low salt stock cube dissolved in 250ml carrot water)
Method
Mashed potato
1. Peel, quarter and boil potatoes for 15 minutes.
2. Mash in milk and butter
Meat Sauce
3. Over a medium heat, soften onion in olive oil for 5 minutes
4. Add lamb mince and brown
5. Blanch carrots for 2 minutes and retain water
6. Stir in carrots and herbs
7. Dissolve concentrated chicken bouillon or stock cube in 250ml carrot water.
8. Dissolve cornflour in 1 tbsp cold water and stir into bouillon
9. Add bouillon to meat sauce and bring to boil until thickened.
Finally
10. Pour meat sauce into oven dish
11. Cover with mashed potato and fork through
12. Cook for 20 minutes at 180 degrees
13. Brown under a hot grill for 1 - 2 minutes
