Spaghetti Bolognese
Recipe for four portions
Meat
10ml / 1 tbsp / Olive Oil
400 grammes minced beef
Tomato Sauce
20ml / 2 tbsp / Olive Oil
40 grammes / ½ small onion, finely chopped or processed
2 cloves garlic, crushed
100 grammes / 1 de-seeded red pepper, chopped
400 grammes chopped tomatoes
5 grammes / ½ tbsp tomato puree
5 grammes / ½ tbsp sun-dried tomato paste
½ gramme / ½ tbsp fresh basil
5 grammes /1 tsp raw brown cane sugar (optional)
Spaghetti
200 grammes spaghetti
4 ml / 1 tsp olive oil
Method used
Meat
1. Fry meat in Olive Oil until browned and cooked through (10 - 15 minutes)
Tomato Sauce
2. Over a medium heat fry the onion for 5 minutes until softened.
3. Add garlic and stir for one minute.
4. Add the pepper, tomatoes, tomato puree, sun-dried tomato paste, basil and sugar and simmer for 15 minutes until thickened
5. Puree or process until smooth
Spaghetti
6. Cook the spaghetti in a large pan of boiling water with the olive oil until al dente and drain well.
Finally
7. Stir the meat into the tomato sauce
8. Add to the pasta and mix until all of the pasta is coated
